Bonito flakes, bonito flakes, fish flakes, katsuo-bushi / か つ お ぶ し / 鰹 節 (Japan).

What is it?
Bonito flakes are the shavings of a dried, fermented and smoked tuna variety, namely the skipjack tuna. Also called bonito, skipjack, skipjack tuna or Katsuwonus pelamis. Such a dried piece of bonito is called katsuobushi. In the first instance, it may seem a bit like fish food in terms of smell, but it is really delicious in dishes. Thanks to the fermentation, it has a nice umami flavor.

How to use?
From the somewhat thicker shavings (kezuri-katsuo) is pulled together with kombu japanese broth (dashi). The thinner shavings (hana-katsuo) are added as a seasoning to all kinds of dishes. The funny thing is that a tuft of bonito flakes on a hot dish seem to dance through the rising heat. (see short movie)
