Garlic is good for you!
Remember the garlic olive oil from our Paella Marinera? We'll use this to spice up our mussel broth.
We'll reduce the mussel broth to 2/3 (unless it's already too salty when you cooked the mussels) and add our garlic oil.
Next we devein the scampi's and add the carapaces to the broth. Add some black pepper and cayenne to taste. Add garlic and let it simmer for 5 mins.
Add them to the oven dishes, add a bit of butter. Put in the oven for about 15 mins at 180° + grill.
Make sure you turn on the grill at the very last minute to get a nice crusty scampi.
