I replaced the tuna with salmon in this fresh spring salad.
Panko (パ ン 粉), Japanese breadcrumbs, Japanese bread crumbs, Japanese bread crumbs
What is it?
Panko are small, dry flakes / pieces of bread, intended as a coating for fried snacks. Sweeter and airier than our Western breadcrumbs.
How to use?
Just like you use breadcrumbs. You dust a product (pieces of meat, fish, shrimp, whatever) first with some flour, then take it through a beaten egg and press it into a plate with panko so that everything is evenly covered. Then fry in oil at 170 ° C-180 ° C. It is coarser than breadcrumbs and therefore crunchier, but you can first grind the panko a little finer or roll over it with a rolling pin. Keep dry and airtight and it will last for months if not years.
