Description

If you can't get any fresh unfrozen one, don't bother. It's extremely difficult to get really fresh octopus transported on ice here in Belgium. Cook it as soon as you get it (preferably sous-vide low temp) and then consume asap! If not you can freeze it after the sous-vide.
