There is no substitute. It's basically made of sugar, vinegar, salt and MSG (Monosodium Glutamate). You can use it to brine vegetables (sweet-sour), make vinaigrettes, or even make a simple cucumber soup stand out. Just ... use it in combination with other vinegars (like chardonnay), some lime, olive oils... It quickly makes your food taste to sweet so watch out! And yes you can use it to make sushi rice.
